Unsure of what to have for dinner tonight?
CHICKPEA CURRY is the answer! (recipe courtesy of mamma webster)
The Recipe:
2 large cans of chick peas (450g-ish)
1 tsp salt
1 ½ tablespoon oil
1 large onion
2 garlic cloves
1 tablespoon fresh ginger
1 teaspoon ground tumeric
1 teaspoon garm masala
1 can tomatoes
1-2 green chillies (or red if you like it hot)
2 tablespoons fresh mint
2 tablspoons lemon (or lime) juice.
The Method:
Heat oil or ghee in saucepan or deep fry pan and fry onion, garlic and ginger until soft and golden. Add tumeric, garam masala, tomatoes, chillies, mint, salt and lemon/lime juice. Add the beans and stir well over medium heat for 5 -10 minutes. Add 1 cup reserved chick pea juice and cook until gravy is thick. Serve with rice and Indian breads.
