The meat n two veg of a vego. And the secret to the tastiest tomato base around.
Ingredients - Broccoli, zucchini, garlic, onion, olive oil, chilli sauce, tomato sauce, tinned diced tomatoes, firm tofu, Parmesan cheese, salt, pepper, fresh basil
Method - Chop up as much broccoli and zucchini as you'd like, with the amount of garlic and onion to match (go heavy on the garlic). Heat some olive oil in a large wok or saucepan and chuck in your garlic and onion for a minute or so. While that's going, heat some olive oil in a pan, cut yourself some tofu steaks and grill them in the pan. You can drizzle a little chilli sauce on top if you'd like. Add the broccoli and zucchini to the wok and cook until starting to soften, then add in the tinned tomatoes. Simmer and add a little water if need be. Keep it simmering and season as you go- lots of salt and pepper, some chilli sauce, tomato sauce until it's that little bit tasty and sweet. When the vegies are almost done and the sauce is nice and thick and rich, stir through some fresh basil (lots, don't be afraid). Plate up (yeahhhh) your tofu steaks and dollop a generous mound of vegie mix on top. Serve with fresh shaved parmesan on top and some more cracked pepper.
